INGREDIENTS: 

  • 3/4 cup vegetable oil
  • 3/4 mashed banana
  • 1 tsp vanilla
  • 1 cup unbleached or whole wheat flour
  • 3 cups rolled or quick oats
  • 1/2 cup raw cane sugar
  • 1 cup packed brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cloves (optional*)
  • 1/2 tsp nutmeg (optional*)
  • 1 cup raisins (optional*)

INSTRUCTION: 

  1. Preheat the oven to 375°F

  2. In one bowl add the well-mashed banana, oil and vanilla together and mix well.

  3. In a separate bowl/container combine all dry ingredients together: the flour, quick oats, sugars, baking soda, salt, cinnamon, cloves and nutmeg.

  4. After both mixes are well combined, mix together in one bowl. Add raisins.

  5. Because of the oil, the mix may be a little difficult to roll into balls. Add a little bit of flour if mix does not stick well. Roll mix into half-inch balls and place at least an inch apart in wax-paper layered baking pan. Bake for about 9 to 10 minutes. Leave cookies on sheet for a few minutes to cool down and remove onto plate or wire rack. 

*The cloves, nutmeg and raisin can be left out/added for preferred taste. The banana makes up for lack of ingredients and gives the cookies enough deliciousness.
